We are doing very well with the kitchen re-model. Some plans were pushed back due to the snow last week, but we are quickly catching up. And I think the various contractors (electricians, plumbers, flooring guys, etc.) are anxious to work too. This morning our new hardwood floor was installed. It's stunning. If I had more money I'd get the entire house (common areas at least) re-done in hardwood. Love. It.
In any case, we have now been living out of our downstairs for 5 weeks. This is the beginning of week # 6. We have a few things left to do, mainly the backsplash. And the appliances need to be installed, etc. etc. But the rest is little stuff. We're hopeful to move back upstairs in two weeks. Or so.
So, this is the post where I share my fabulous menu for this week. The past few weeks I was being creative with the crockpot, etc. Well, this week is all about the freezer and and the microwave. And the griddle. But that's it. I'll be glad to be back upstairs in the real kitchen -- mainly for clean up purposes!!
Monday: Frozen lasagna, bagged salad, rolls (toaster oven)
Tuesday: Frozen eggplant parm, frozen broccoli
Wednesday: Frozen burritos, spanish rice (micro rice mixed with salsa), guac
Thursday: Soup, grilled cheese
Friday: Breakfast for dinner (griddle pancakes and eggs) with fruit
Saturday we'll be at a wedding. Good luck to my mom and dad. :)
